YIELD: MAKES 18 COOKIES, PREP TIME: 10 MINUTES, COOK TIME: 20 MINUTES (IN THE FRIDGE) TOTAL TIME: 30 MINUTES

INGREDIENTS:
2 cups rolled oats
1 cup all natural almond butter (or any nut butter you like)
1/2 cup maple syrup
DIRECTIONS:
Line a rimmed baking sheet with a silpat mat or coat with some cooking spray. Set aside.
In a large bowl, combine almond butter and maple syrup and microwave for 20 seconds to soften. Give it a good stir and then add in you oats.
Mix until all of the oats are coated in the almond butter/maple syrup mixture.
Scoop a heaping tablespoon of the dough and shape in your hands until you have formed a cookie. Place on baking sheet and repeat until you have 18 cookies.
Pop in the fridge for 30 minutes to set up and then transfer to an airtight container. Store in the fridge for up to 10 days. Enjoy!
You can use any type of nut or seed butter you like. I especially like these with peanut butter sometimes.

Peanut butter is a relatively unprocessed food.

It’s basically just peanuts, often roasted, that are ground until they turn into a paste.

However, this doesn’t apply to many commercial brands of peanut butter that contain various added ingredients, such as sugar, vegetable oils and even trans fat.

Eating too much added sugar and trans fat has been linked to various health problems, such as heart disease. Rather than buying junk food, choose real peanut butter. It should contain nothing but peanuts and maybe a bit of salt.

For all purposes, the health effects of regular peanuts should be almost identical to those of peanut butter since it’s essentially just ground peanuts.

You can’t mix chunky peanut butter into stuff like pancakes, but you can eat it in large quantities with just some apples! PaPa Nut butter is one of my go-to brands. It doesn’t have the stuck-to-the-roof-of-your-mouth feel. When you pair it with apples, either sweet or tart, the flavor of the peanut butter compliments but doesn’t over power the apples. Plus, Granny Smith Apples with peanut butter are possibly the most amazing fruit-based snack I know.
